I'll take a look at some options but at a quick comment: the left trackage and turnouts, where they get more 'parallel' near the middle (50-60cm from the left) would be a first possible separation. Sort of similar on the right.
For the 3x 80cm module thinking, you would really be restricted in track options. It is very difficult to connect 2-3 tracks (especially if you try to use joiners) and impossible if you have tracks at different angles.
You can create some elevation but not too much 1-2cm if you use sectional roadbed (Rokuhan) as you cannot make 'vertical' curving. With Atlas/Peco/märklin flex track, you can it much easier.

Many thank for time given and help was given the chance to buy the baseboard at very cheap price. a thank you there 6 in total that can all be bolted together. so might rethink and make 2x 120cm units and see how track can joined

Considering your original size of 1250 x 300, it appears it was drawn in N as both the size (of the overall trackwork) and the turnouts don't match Z dimensions. Attached is an example of similar, in Z, with the layout broken into 3 segments (modules) The Second one as a spur that rises from the right side switch-back, through the middle module, onto the left side.
