Is there a way to run 2 locos back to back rather than "elephant" style? If so how?

Put them both on the track the way that you want them to run. They will both run in the same direction.

Welcome to the group.
For DC operation Thom has said all you need to know.
If you are going to run DCC, there is a direction bit in CV29 that needs to be set.

What they said – but also if you have a unit with a decorative front coupler (for example, the F3s, the E8s, etc.), you will have to swap out the plow and truck for the truck with the attached coupler on the rear locomotive.

The norm for all DC railroad models is that they shall run into the direction where the Vcc rail is on the right hand side and the Gnd on the left. So, two non-modified engines put on the same track (backwards or forwards) will run into the same direction.

What brand of locos are your running? It is possible to swap the polarity of Marklin locos by how the motor magnets are installed. Sometime just switch the trucks can cause locos to run in opposite direction. But again, I have only had this with Marklin, not AZL.

Please search the rail which is connected to Gnd and test which loco is running into "opposite" direction ; is it running forwards ? Now put this loco on the track, reversed 180 degrees. Is it still running forwards (this seems to be so to say impossible), or now backwards ?

John,
In our rush to help the new guy, there may be more information here than you really need, so let's summarize.
Thom is correct that all you need to do is put the locomotive on the track backwards. Your observation about re-wiring is also correct. The thing is that when you put the locomotive on the track backwards, you are essentially "re-wiring" in that the (+) wheels have become (-) and vice versa.
AZL does ship some locomotives with dummy couplers that are more cosmetic than functional. This is not the case for the GP-7s, so no worries. If you are buying them used, there may be a need to discuss this future.
Something to be aware of is that AZL has produced two different series of GP-7s: the 6200 and the 62000. Both are fine locomotives that run well and look good. The 62000 is the newer design with more detail and a newer motor type. It has a speed curve that matches all the newer (5 digit model) locomotives. The 6200 has a different speed curve. This is irrelevant when running a single locomotive. However when running multiple units, you'll have fewer issues if you run only 6200 units together.

Thank you Mark for that concise info. VERY helpful. I have the older C&O GP-7. BUT, I have just purchased a Black Friday special BOGO Conrail SD70 set. So, not to flog a dead horse, but if I understand you and the other posters correctly I should be able to run these 2 new locos in tandem back to back out of the box and I will put the GP7 aside for now.
Not that it matters to the discussion but this is a small 2x4 layout I set up just for the Holidays.

Am I reading this correctly ? If I put two AZL Locomotives/Engines on the single track together (back to front, back to back) they will run ? And it won't Short out/Fry one or both locomotives/engines ? Definitely don't want to Destroy my AZL Locomotives/Engines. Concerned, Apprehensive, Suspicious that this will not Cook both Engines Attachments:

You are reading the information correctly. You may put both (or more) locomotives on the track facing either way and they will all run in the same direction down the track.
