Has anyone tried the optional pilot/plow installation on these models? Did you have to cut off the truck-mounted coupler box, or is there a way to disassemble it?

Thanks Bill. Yes, it is the "irreversible" part that has me hesitating Still, I am thinking my (planned) layout would have +20" radius curves, so I don't think I need be concerned operationally.

Same here. I might do it if I have a spare truck, so I can revert back. It looks like trucks are available for some, but, unfortunately, not for all locos, such as the SD40s, at least from looking at zscalemonster.
Out of curiosity, this test track you showed, I could not see any ties… How?
There are no ties, the rail is just glued directly onto the foamboard surface with thin CA. I lay down one rail, following along the sketched-on centerline and holding it in place with pushpins, and then put a few drops of CA every inch or two. After it dries, the second rail goes down similarly, held in gauge by a couple of MT Z/Nn3 gauges. Not a permanent method for sure, but serves for demo/eval purposes.
(The thin CA is pretty messy for this sort of thing, so gloves are highly advisible.)
